Weekday Vegetarian: A Little Advance Planning to Make an Eggplant Torta

Photo: Kelly Rossiter I arrived home from my cottage last week to find a rather large number of eggplant ready for harvest.I was quite happy with the harvest we had throughout August, and I thought we were more or less done with them. I was a bit surprised to find 5 or 6 ready to eat with another 4 or 5 at a smaller stage and a number of flowers. I imagine that the frost will hit before those flowers come to fruition, but maybe I’ll be lucky and get some more eggplant in October. But for now, I’m thinking about all the ways I can enjoy what I have…. Read the full story on TreeHugger

Susan Powell update missing body

The latest report that kept Susan Powell#39;s family on an emotional roller-coaster was that the body “generally matches” her description: a woman in her 30s about 5 feet tall with short, brown hair, according to the Albany County (Wyo.) Why Nearly Every GOP Senate Candidate is a Climate Skeptic

Photo via RRStar All But One There’s a reason that it was so devastating when the Senate climate bill staggered to an untimely death a couple months ago — beyond that singular failure to enact emissions-reducing legislation, there was the sense that it was the last chance we’d have for action in a long while. Due to the conventional wisdom that the GOP will sweep into power, there would hypothetically be a whole lot of opponents to climate… Read the full story on TreeHugger

New Project Restores Gulf Habitat, One Mile of Oysters At a Time

Photo Credit: Beth Young, via The Nature Conservancy It’s called the 100-1000 partnership — 100 miles of new oyster reefs and 1,000 miles of re-planted marshlands in coastal Alabama, thanks to a coalition of non-profits, including Alabama Coastal Foundation, Mobile Baykeeper, The Nature Conservancy and The Ocean Foundation. Because of the damage done to marshlands, oyster reef habitats and seagrass beds through human activities — the most recent of which is of course the Gulf oil disaster — fisheries have suffered. But the coalition and its ” 100-1000 partnership ” aims to bring back the buffers that … Read the full story on TreeHugger
