Today is National Sandwich Day and all across the country, people are having moments of joy because the now-beloved Popeyes Chicken Sandwich  has made a glorious return after three months off the menu. But, if you don’t want to have to wait in line for hours at the counter or drive-thru, we have a bit of a life hack for you. Here’s how you can make your own copycat Popeyes Chicken Sandwich via Gimmie Delicious. INGREDIENTS: For the chicken marinade 2 boneless skinless chicken breasts 1 cup buttermilk 1 teaspoon EACH paprika garlic powder, black pepper, salt For Breading 1 cup flour ½ cup corn starch 1 tablespoon EACH paprika garlic powder, onion powder, cayenne pepper (for spicy) 1 teaspoon EACH salt & pepper Spicy mayo ½ cup mayo 1 teaspoon hot sauce 1 teaspoon paprika or cajun or taco seasoning 1/2 tsp garlic powder To Assemble: 4 medium-sized brioche buns Mayonnaise Sliced pickles 3-4 cups canola oil for frying DIRECTIONS: To Marinate chicken Pound chicken breasts in between two pieces of parchment paper or plastic wrap. Cut each chicken breast in half crosswise to make 2 small pieces of chicken about the same size as the bun (see video below). In a large bowl, buttermilk, paprika, garlic powder, salt & black pepper. Add the chicken to the mix and place in the fridge to marinate up to 24 hours or use right away. To Cook Chicken Heat oil in a large heavy-duty skillet or pot on medium temperature or until the temperature reaches 350F. In a medium shallow bowl, whisk the flour, cornstarch, and spices. Drizzle 2-3 tablespoons of the buttermilk batter into the flour mixture and mix it through with a fork. Working with 1 piece at a time, dredge chicken the flour mixture and press flour on the top chicken to form a thick crust. Transfer chicken to hot oil and fry for 3-5 minutes per side or until the outside is crispy and golden and the internal temperature reaches 165F. To Assemble Melt 1 tablespoon butter in a large saucepan and toast buns face down until golden and crisp. Whisk all the ingredients for the mayo in a small bowl and spread a generous layer of mayo on each bun. Top with pickles and chicken. Enjoy hot! New Monument Will Honor New York City’s Historic Black Seneca Village Community

T he legacy of a historic Black community that once resided in the epicenter of New York City will be memorialized. According to the Smithsonian , a new monument will capture the history of Seneca Village. A planned monument announced by Mayor Bill de Blasio’s office earlier this month is set to honor a prominent African-American family that once lived in the bustling community. https://t.co/e9lP5P9eNG — Smithsonian Magazine (@SmithsonianMag) October 30, 2019 The 19th-century village—which was cultivated in 1825—was one of the state’s first free Black communities. It spanned from West 83rd Street to 89th Street; which is now Central Park. In the 1850s the village had over 225 residents and African Americans made up two-thirds of the population. Many of the properties that were a part of the village were Black-owned. The creation of Central Park ultimately led to the erasure of the community and the displacement of its residents. Individuals living in Seneca Village were forced to leave in 1857. New York City Mayor Bill de Blasio recently announced that a monument will be created to pay homage to a prominent family that resided in the community. The Lyons family owned and operated a boarding house for Black sailors. The home also served as a stop on the Underground Railroad. Mary and Albro Lyons were educators and their daughter Maritcha Remond Lyons was involved in social activism and co-founded the Woman’s Loyal Union of New York and Brooklyn. The $1.15 million memorial is being funded by several organizations including the Andrew W. Mellon Foundation, the Ford Foundation, the Laurie M. Tisch Illumination Fund and the JPB Foundation. “The Lyons family story began more than a hundred years ago in a thriving Black community that was razed to build Central Park,” Deputy Mayor for Housing and Economic Development Vicki Been said in a statement . “We finally recognize their contribution to New York and American history with a monument.” Although many people are excited about the project, there has been some criticism because the monument may be placed on 106th Street; 20 blocks away from the village’s historic location. There is no word on when the project will be completed. B lack women are thriving in the realm of entrepreneurship despite the obstacles they face when it comes to securing capital for their business ventures. Research shows that although less than one percent of Black women entrepreneurs receive venture capital funding, they are the fastest-growing group of business owners in the country. Hair care entrepreneur Muhga Eltigani is one of the many female founders making power moves in business. According to Inc. , the NaturAll Club founder recently became one of about 50 Black women in the country to raise $1 million in funding. (@Inc) October 12, 2019 Eltigani founded NaturAll Club in 2015. The natural hair care subscription platform delivers fresh handmade hair products on a monthly basis. Some of the products include Fresh Avocado Deep Conditioner, Jamaican Black Castor Oil Growth Serum, and a handmade flaxseed gel. Last year Eltigani won $500,000 in a startup competition but decided to turn down the prize because it would have required her to move her Philadelphia-based company to Buffalo, New York. She wanted to wait for an opportunity that was in alignment with her brand. Her patience paid off and she received an investment from New Voices Fund CEO Richelieu Dennis . Dennis initially made a $1 million investment and after plans for Eltigani’s company grew, he decided to invest another $4 million. Dennis is dedicated to ensuring that women of color entrepreneurs have access to venture capital funding. “The facts about investments in women of color entrepreneurs, particularly black women, are astonishing,” Dennis told the news outlet. “Entrepreneurship among women of color has increased more than 320 percent, but less than 1 percent of those women receive access to the funding needed to sustain and grow their businesses. This is unacceptable.” Several individuals are stepping up to address the funding gap for Black women. Actress Keshia Knight Pulliam teamed up with entrepreneur Arian Simone to launch the Fearless Fund ; a $5 million venture capital fund to support startups created by women of color. Jeremy Roloff Undergoes Surgery, Vows to Live Healthier Lifestyle

Jeremy Roloff has shared some surprising news with fans. And also some concerning news. The former Little People, Big World star took to Instagram late this week and informed followers of the following piece of information: He very recently underwent surgery. On Saturday, the 29-year old explained what happened, why it happened — and how he’s making changes to ensure it never happens again. “Yesterday I had my first surgery. Inguinal hernia surgery. “I’ve had a hernia for the past few years, but thought I could live with it in order to avoid surgery, so I ignored it.” Yiikes, huh? We don’t recall Jeremy having ever touched on such an issue before. He continued with his update by providing a lot more information. To wit: “Over the last several months I’ve been having some increasing health concerns, specifically severe lower back pain and chronic shoulder pain.  “I’ve come to realize that I’ve been subconsciously protecting my hernia with poor posture and lack of core strength.” The host of a podcast and the author of a memoir, Jeremy went on to say that he isn’t in peak physical condition. This has a lot to do with how he’s been feeling, too. “I’ve pretty much eliminated all physical exercise too which has increased the problem because of muscle loss which has me walking weird as well,” he wrote online, adding: I’ve been ignoring my health and it all came to a head when just a few days ago I threw out my back after sneezing. Embarrassing, right? Roloff is expecting his second child with wife Audrey in January. So it’s imperative that he gets back on his feet in order to help with his growing family, especially once the newborn arrives. “All said, I’m considering this a turn in my health journey,” Roloff concluded. “I have a goal to be in the best shape of my life by 32. Health is something that needs continual attention or else it unnoticeably fades – like most things in life. Time to put some attention back on personal health!” For those interested, a hernia occurs when an organ pushes through an opening in the muscle or tissue that holds it in place, per the Cleveland Clinic. For men, the inguinal canal is a passageway for the spermatic cord and blood vessels leading to the testicles. The injury can be very painful if left untreated, as Jeremy just found out. We’re glad he’ll soon be back on his feet, though, and ready to help with precious baby number-two. Jeremy and Audrey announced that they are expanding their family in July … and revealed it would be a baby boy in August. ”We’re so excited!” Roloff wrote on Instagram for the gender reveal, which featured footage of the former reality stars finding out it was a boy via blue-colored smoke. “We are surprised and can’t wait to be a family of four,” Audrey captioned her own video. Source: Alex Trautwig / Getty Reports Show Trump’s Border Wall Isn’t Working According to The Washington Post , mexican drug dealers have repeatedly cut holes all up and through Trump’s border wall by using commercially available power tools, opening gaps large enough for people and drug loads to pass through. U.S. agents have reportedly confirmed “multiple breaches” to sections of the wall. Smugglers are easily using cheap saws to cut holes in the base of the wall and then are able to push the 18- to 30-feet tall posts to the side, making it possible for people and contraband to go through the structure. Officials are dumbfounded after Trump proclaimed the wall “virtually impenetrable”. But smugglers are finding ways to easily get through, whether it be climbing lower sections with makeshift ladders or by cutting holes in weak points of the structures.
