Weekday Vegetarian: Mashed Potato, Rutabega and Parsnip Casserole

Photo: Kelly Rossiter My husband is involved with an non-profit organization in Ontario that preserves historic buildings. Every year they have a silent auction as a fundraiser and one of the things people bid on is dinner for four at our house. Everything I serve is from Ontario, down to the wines, so I usually suggest to purchasers that dinner in the spring or early summer will provide a bit more choice in terms of produce. This year our guests chose to have dinner in December, so that meant root vegetables would be on the menu…. Read the full story on TreeHugger

Weekday Vegetarian: Caramelized Butternut Squash with Sage and Hazelnut Pesto

Photo: Kelly Rossiter Here is a great recipe to add to your repertoire. I made this for a dinner party, and in the last minute rush forgot to mix the squash with the pesto. Honestly, the caramelized squash itself was so delicious, nobody noticed the missing ingredient. The pesto on it’s own was delicious as well and I imagine it will end up adorning some pasta shells. … Read the full story on TreeHugger

Weekday Vegetarian: Coconut Tofu Curry

Photo: Kelly Rossiter Most of the cookbooks that promise dinner in 30 minutes or less are filled with recipes that involve opening a lot of cans, so when I saw this scratch recipe from the cookbook Time for Dinner I thought I’d give it a try. It certainly was quick and easy and it was quite tasty, although I didn’t have a lot of the suggested toppings on hand, which I think would add more interest. … Read the full story on TreeHugger

Weekday Vegetarian: Cauliflower and Chestnut Gratin

Photo: Kelly Rossiter I was cleaning out my fridge the other day and I had two ingredients that had got pushed to the back after my Thanksgiving dinner party . One was a bag of cauliflower which had already been cleaned and cut into florets and the other was a bowl of roasted chestnuts . I hate food waste at an… Read the full story on TreeHugger

Weekday Vegetarian Thanksgiving: Spicy Cheese Biscuits

Photo: Kelly Rossiter I don’t normally serve bread or biscuits with dinner, but our vegetarian Thanksgiving dinner — this is one of nine recipes — was going to have sauces and gravy and no mashed potatoes to catch all that good stuff, so biscuits seemed like a great idea. I could have made plain butter biscuits , or sweet potato bi… Read the full story on TreeHugger

Weekday Vegetarian: A Little Advance Planning to Make an Eggplant Torta

Photo: Kelly Rossiter I arrived home from my cottage last week to find a rather large number of eggplant ready for harvest.I was quite happy with the harvest we had throughout August, and I thought we were more or less done with them. I was a bit surprised to find 5 or 6 ready to eat with another 4 or 5 at a smaller stage and a number of flowers. I imagine that the frost will hit before those flowers come to fruition, but maybe I’ll be lucky and get some more eggplant in October. But for now, I’m thinking about all the ways I can enjoy what I have…. Read the full story on TreeHugger

Weekday Vegetarian: Corn on the Cob with Maple-Chipotle Glaze

Photo: Kelly Rossiter This is the time of the year I always look forward to. I love it when dinner can consist of nothing more than a couple of ears of corn , a plate of sliced tomatoes and a green salad . There’s nothing easier to make, and it’s a totally satisfying simple supper. This week is going to be a celebration of corn at the Weekday Vegetarian, but I had to start with my favourite way to eat it, straight off the cob… Read the full story on TreeHugger
